Spinach Quiche

I love making different kinds of quiche, and spinach quiche is my favorite. This is not hard to make, and I like it for breakfast, lunch or dinner!

Ingredients needed:

~ Supplies for a pie crust (I buy a pre-made crust, but you can make it from scratch)
~ 6oz spinach – either cook down fresh spinach, or heat up frozen spinach and press the water out
~ 3/4 cup milk
~ 1 cup cheddar cheese
~ 4 eggs
~ Salt and pepper to taste

Preheat your oven to 350 degrees.

Grease your pie pan, and prepare the pie crust in the pan. Poke it with a fork and pre-bake your crust.

While the pie crust is baking, prepare your wet ingredients, mixing them all together. Again, be sure that the spinach has the water pressed out of it so that it doesn’t make the quiche watery.

When the pie crust looks like it has been baked, take it out of the oven and pour the filling in the pie. The crust shrinks down a little when it pre-bakes, and the filling usually comes up high on the crust. The crust will puff up a little as it bakes, but even if it goes a little over the crust, I don’t mind.

Bake for 30-40 minutes, until pie looks golden on top.

I usually allow to cool a little bit before serving, because it seems to set.

We make many different versions of quiche, with mushrooms and other veggies. I think the key is to make sure your veggies aren’t watery. It is nice to try out different flavor combinations.

    I devised this recipe myself, and I just sort of added ‘this and that.’ This recipe is very forgiving, it’s okay to add or remove ingredients according to your taste!

    We would have quiche quite often when the kids were little. Having 10 kids you would want to make meals that were good but inexpensive. The quiche was one of those meals. I would really enjoy a spinach quiche right about now.
