Baked Spaghetti Squash With Tomatoes & Feta

We tried the famous TikTok Feta pasta recipe and loved it, and then a friend recommended trying this recipe with spaghetti squash. I don’t consider myself a big fan of squash, but I loved this recipe! It so easy to make and the finished dish is so flavorful.

Ingredients

Spaghetti Squash
Olive Oil
1 block Feta
Cherry or grape tomatoes
Basil (optional)
Salt & Pepper, to taste

Directions

The first step is to cut the spaghetti squash. The squash is very solid, so I wasn’t sure if I would be able to cut it. I looked online, and the method I used was to place the squash on a towel, cut the ends off first, then place on one of the cut ends and cut the long way.

Preheat oven to 400 degrees F.

Once you have successfully cut your squash, place the halves in a pan. You can use a nonstick pan, or on foil.

Drizzle with olive oil.

Place 1/2 block of Feta in each side of the spaghetti squash. This was approx. 4oz Feta for each half.

Sprinkle tomatoes in the squash. We used grape tomatoes, cut each in half, and filled the squash with as many as could fit.

We added about 1.5 cloves fresh pressed garlic in each half. I would recommend spreading it around a little bit, as there were some spots that burned. Drizzle some more olive oil on top, and sprinkle with salt and pepper.

Bake for approximately 1 hour to 1 hour 15 minutes. Poke with a fork to see if it is tender.

We tested the squash at the 1 hour mark and it was still firm. It seemed just right after the additional 15 minutes.

Once the squash is finished baking, you can add some fresh ribbons of basil to mix in.

Mix the ingredients in the shell, or scoop out and then mix.

Enjoy! The leftovers were also great!
