Chocolate Chia Seed Pudding

I love using chia seeds in different dishes, as they have so many wonderful health benefits! As a long time vegetarian, I like that chia seeds are the richest whole food source of Omega-3 (ALA). From heart health to nutrients, chia seeds are a great addition to your diet, and chia pudding makes it easy.

Here’s how to make chia pudding with a chocolatey twist!

Ingredients

1/4 cup chia seeds
1 cup unsweetened almond or coconut milk (or your preferred milk)

1/4 cup unsweetened cocoa powder
1-2 tablespoons maple syrup or honey (optional, for sweetness)
1/2 teaspoon pure vanilla extract
Optional toppings: Fruit, nuts, shredded coconut, etc

Directions

In a medium-sized bowl or jar, combine the milk, cocoa powder, and sweetener. Use a whisk or frother to make sure the cocoa powder is blended in.

Then mix in your chia seeds.

Stir thoroughly to ensure the chia seeds are evenly distributed and that there are no clumps.

Cover the bowl or jar and place it in the refrigerator.

Stir after approximately 30 minutes to break up any clumps, then allow the mixture to sit for at least 2 to 4 hours, or overnight.

The chia seeds will absorb the liquid and expand, creating a pudding-like consistency.

Once the pudding has set, give it a stir and spoon it into serving bowls or jars.

Top with fruits, nuts, granola, chocolate shavings, or whatever else you like.
