Roasted Pumpkin Seeds

I love making roasted pumpkin seeds every year around Halloween, especially when we carve pumpkins. Pumpkin seeds are so tasty and good for you too. Here is my favorite recipe, which includes boiling the seeds in saltwater.

What You Need

Pumpkin seeds

Salt

Olive Oil

Directions

Start by removing the seeds from a pumpkin.

Rinse and clean the seeds so that they don’t have pulp and stringy pieces on them.

Prepare a pot of water. Use about 2 tablespoons of salt per quart of water.

Bring to a boil and boil the seeds for about 10 minutes. The seeds should start to be a little translucent on the outside.

Drain the seeds. Toss with oil (I usually toss them with oil in a colander).

Spread the seeds on a baking sheet.

Bake at 400 degrees F. I like to check the seeds every 5 minutes and mix / rotate them with a spatula.

The seeds can take anywhere from 5-20+ minutes.

Enjoy! This is one of my favorite fall snacks!
