I love using chia seeds in different dishes, as they have so many wonderful health benefits! Chia seeds are richest whole food source of Omega-3 (ALA), which is especially great for vegetarians! Omega-3s are often sourced from fish, so chia seeds are a great alternative food source of Omega-3s.
Omega-3 fatty acids offer numerous health benefits. They play a crucial role in maintaining heart health by reducing inflammation, lowering blood pressure, and decreasing the risk of heart disease. Omega-3s also support brain function, improving cognitive performance and reducing the risk of neurodegenerative diseases. Furthermore, they contribute to mental health by alleviating symptoms of depression and anxiety. These fatty acids are also beneficial for eye health, supporting vision and reducing the risk of macular degeneration.
Vanilla chia seed pudding is a simple, healthy, and versatile treat that’s perfect for breakfast, a snack, or even dessert. With its creamy texture and delightful vanilla flavor, it is easy to make.
Here’s how to make this nutritious and tasty pudding.
Ingredients
1/4 cup chia seeds
1 cup unsweetened almond or coconut milk (or your preferred milk)
1-2 tablespoons maple syrup or honey (optional, for sweetness)
1/2 teaspoon pure vanilla extract
Optional toppings: Fruit, nuts, shredded coconut, etc
Directions
In a medium-sized bowl or jar, combine the chia seeds, milk, maple syrup or honey (if using), vanilla extract.
Stir thoroughly to ensure the chia seeds are evenly distributed and don’t clump together. Be sure to mix the ingredients carefully, because I did notice spots where my chia seeds had soaked up the sweetener.
Using a Mason jar works quite well, because I like to shake the ingredients every few minutes or so in the beginning. Otherwise you will notice the chia seeds clumping up in the bottom of the jar.
Cover the bowl or jar and place it in the refrigerator. Stir after about 30 minutes to break up any clumps. Then allow the mixture to sit for at least 2-4 hours, or overnight. The chia seeds will absorb the liquid and expand, creating a pudding-like consistency.
Once the pudding has set, give it a final stir and spoon it into serving bowls or jars. Top with your favorite fruits, nuts, granola, or a drizzle of nut butter for added flavor and texture.
Vanilla chia seed pudding is a delightful and nutritious dish that’s as easy to make as it is delicious. With endless topping options and a naturally wholesome base, it’s a recipe you’ll come back to time and again.
