If you’ve ever grown mint, you know if grows like wildfire. I love having fresh mint on hand for recipes, and only learned about “Meadow Tea” recently.
We have mint that grows in pots and any flower beds it can find its way in to!
This is a lovely, easy recipe for enjoying your mint as a refreshing tea.

Ingredients
- 2 quarts water (8 cups)
- 1 cup mint (any variety) (you can leave the mint on the stems)
- ½ cup of sugar (I prefer raw sugar)
- 1 tablespoon lemon juice
- Lemon slices and mint sprigs for garnish (optional)
Directions
Carefully wash your mint. I always check both sides of the leaves to make sure there aren’t any bugs on them. I also use my fingers to brush off dirt, since mud usually splashes up on the undersides.
Bring 2 quarts of water to a boil.
Add one packed cup of mint leaves, and allow it to steep for a couple hours. You can leave the leaves right on the stems.
Remove from heat and strain the tea, then add the sugar and lemon juice.
Transfer the tea to another container (I use large glass jars).
Refrigerate until chilled, or if it has chilled sufficiently, you can enjoy some right away over ice.

Serve over ice with mint sprigs and lemon slices!
