This is an easy and delicious recipe. I stumbled upon this when I was making some recipes with frozen corn I had saved. This is a great side dish that is easy to reheat.
Ingredients
Mixture 1:
2 cups corn (or 1 cup corn and 1 cup chopped zucchini)
1 cup cornmeal
1/2 cup milk
2 eggs
6 tbsp vegetable oil
Garlic salt
Mixture 2:
2 cups cheese
1 small can green chilies
Jalapenos (optional – sliced and added to taste)
Directions
Preheat oven to 350 degrees F.
Prepare mixtures 1 and 2 separately.
Divide mixture 1 in half. Spread in an 8×8″ pan.
Top with mixture 2 (the cheese pepper mixture ,or omit the peppers).
Add the other half of mixture 1.
Bake for 35 minutes.
